8. Foil Boat Pork Butt

Chef Tom smokes a pork butt using the popular brisket cooking technique known as the "foil boat" which braises the meat in its juices. The pork butt is simply seasoned, smoked overnight, then wrapped in foil and returned to the smoker to braise. The result is a smoky and delicious pulled pork that’s fall-off-the-bone tender.
