The Menu:
Appetizer
Flaky croissant toast points are topped with a smooth, whipped cheese that’s light yet creamy, creating a rich base for the savory toppings. Crisp fried prosciutto adds a salty crunch, balanced by a drizzle of sweet balsamic and a delicate dusting of cured egg yolk for depth and color.
Main Course
Cornish game hen is paired with a tart-sweet cranberry gastrique that enhances its smoky flavor. It’s prepared alongside a velvety potato purée and charred Brussels sprouts tossed with crispy bacon and a warm, savory bacon vinaigrette.
Dessert
Pumpkin tiramisu layers spiced pumpkin mascarpone cream with espresso-soaked ladyfingers for a cozy twist on the classic Italian dessert. Finished with a dusting of cocoa and a hint of cinnamon, it’s rich, creamy, and perfectly balanced with warm autumn flavors.

Saturday Grilling Event
November 15th - 11am to 1:30pm
New Thanksgiving Favorites
This class takes outdoor grilling a new direction with three dishes that blends smoky flavor, seasonal ingredients, and approachable techniques. We begin by preparing a Honey Mustard Glazed Spatchcocked Turkey, learning how to balance sweet and tangy notes while mastering smoke from the grill. The glaze caramelizes beautifully over the tender turkey, creating a golden crust and sealing in juicy flavor. Along the way, the class explores marinades, indirect heat methods, and tips for achieving perfect results every time.
Next, attention turns to a side dish that’s as comforting as it is satisfying — Smashed Potatoes. Students will discover how to parboil, flatten, and grill potatoes until their edges turn irresistibly crisp, while the insides remain soft and buttery. A sprinkle of herbs, a touch of smoke, and perhaps a drizzle of garlic butter bring this humble dish to life. The process emphasizes texture and technique, teaching how the grill can transform simple ingredients into something extraordinary.
To round out the experience, the class concludes with a Pumpkin Tiramisu, a seasonal twist on the Italian classic that captures the essence of fall. Participants will learn to layer espresso-soaked ladyfingers with a spiced pumpkin mascarpone cream, learning how to balance sweetness and spice for a rich, airy dessert. Come celebrate the versatility and joy of cooking on the grill.
