Chef Tom cooks up the famous bacon bite recipe from BBQ Brian Misko’s “Grilling with House of Q” cookbook. A slab of cured bacon, cut into large strips and smoked, and then then direct grilled before being sliced into cubes. Delicious!
Preheat your Yoder Smokers YS640 pellet smoker to 250ºF.
Slice the bacon into 1” wide slabs. Rub all surfaces with a small amount of mustard. Season all surfaces with Plowboys BBQ Yardbird Rub. Let set up for 5-10 minutes.
Smoke bacon slabs until the internal temperature reaches 200ºF (about 75-90 minutes). Turn the cooker up to 400ºF, then brush the slabs with House of Q Apple Butter BBQ Sauce and move the bacon directly over the firebox. Cook another 15 minutes. Remove from cooker. Rest 5 minutes. Slice into cubes for servings.
