- 2 well marbled ribeye steaks (about 8 oz a piece)

Cattleman’s Grill Smoky Chipotle Coffee Steak Rub

1/2 tbsp olive oil
- 1/2 tbsp butter
Directions
Preheat the Grill:
Set up your Yoder Smokers YS640 pellet grill for direct grilling by opening the diffuser door. Or prepping your pellet grill for direct flame grilling.
- Place a cast iron griddle over the fire pot and preheat the grill to 425°F, preferably using pecan pellets for added flavor.
Season the Steaks:
- Generously apply Cattleman’s Grill Smoky Chipotle Coffee Steak Rub to both sides of the ribeye steaks.
- Let the steaks rest at room temperature for about 10 minutes to allow the rub to penetrate.
Sear the Steaks:
- Add olive oil and butter to the preheated griddle.
- Once the butter begins to brown, place the steaks on the griddle.
- Cook the steaks to your desired internal temperature, flipping once halfway through. For medium-rare, aim for 135°F.
Rest and Serve:
- Remove the steaks from the grill and let them rest for several minutes to allow the juices to redistribute.
- Slice and serve immediately for optimal flavor and tenderness.
