WHAT YOU'LL LOVE

  • A double grind builds better texture than a single pass. Grinding the brisket once, seasoning it, then grinding it a second time distributes the spices evenly throughout the meat rather than leaving pockets of unmixed seasoning.
  • Splitting the mix into two batches keeps the stand mixer from overworking the meat. Beating half the ground brisket with the liquid at a time, rather than all of it at once, helps the sausage bind properly without the mixer struggling under a full load.
  • An overnight, uncovered rest forms the pellicle. Letting the stuffed links sit open in the fridge overnight creates a tacky surface that helps smoke actually adhere to the casings the next day.
