Chef Tom visits one of his favorite restaurants, Lotte in Wichita, KS. Accompanied by Owner / Executive Chef Josh Rathbun, the two discuss Lotte's menu and make a couple of customer favorite dishes. Starting with Tuna Crudo. This dish is bright, spicy, and bold. Diced tuna dressed with a sriracha vinaigrette rests on a savory scallion pancake, bringing crisp texture and flavor. The next dish is a lamb orecchiette pasta. Sausage, broccoli and fresh pasta are the stars of the show, pairing well with aromatics like shallots and chives.
