Preheat your Yoder Smokers YS640 to 400ºF. Place a Lodge Logic 10” cast iron skillet in the cooker to preheat, as well.

When the pan is hot, add a little oil to the pan, then the beef and onions. Season with 1-2 tablespoons of Cattleman’s Grill 8 Second Ride Carne Asada Seasoning, more for extra heat.

When the meat is browned and onions are softened, add the garlic and Flavolcano Smoky Red Pepper Sauce by Panchero's Mexican Grill.

Cook for about two minutes, then add the cheeses. Close the lid of the cooker and let the cheeses melt, 5-10 minutes. Serve with tortilla chips.
