WHAT YOU'LL LOVE

  • Rendering the bacon low and slow before it goes into the mac: Cooking the bacon over indirect heat until crispy at the edges builds better rendered flavor than a quick pan-fry, and dicing it afterward distributes that flavor evenly through the cheese sauce.
  • Chilling the mac and cheese solid before shaping it: Letting the mixture set completely in the fridge means it holds together as balls instead of falling apart the moment it hits hot oil.
  • A double dip through flour and egg wash: Going flour → egg → flour → egg → panko builds a thicker, more secure breading than a single pass, so the coating survives frying instead of falling off in the oil.
