This is Chef Tom's Southern-inspired take on holiday turkey: a sweet tea brine, savory Ranchero seasoning, real maple syrup, and a smoky pecan rub layered together for a turkey that leans sweet-and-smoky instead of the usual herb-and-sage profile.

You get Cattleman's Grill Butcher House Brine (1 lb) for the injection base, Cattleman's Grill Ranchero Seasoning (11.8 oz) for the skin and cavity, Tapped Maple Syrup (8 oz) for the glaze, and John Henry's Pecan Rub (11.5 oz) to season the vegetables roasting underneath the bird. Whisk the Butcher House Brine into 1.5 gallons of sweet tea, brine the turkey about 1 hour per pound, then season, roast, and brush on the maple syrup glaze toward the end of the cook so it caramelizes instead of burning.

This kit is built for a spatchcocked turkey up to about 20-22 lbs. Cook until the thickest part of the breast reaches 165°F, the USDA's minimum safe temperature for poultry — that holds true no matter which method you use: smoker, oven, grill, or fryer.
