This is the kit behind Chef Tom's sweet-and-spicy take on smoked turkey: an ancho-chipotle brine, a honey-chipotle butter injection, and a savory Road House seasoning on the outside.

You get two 16 oz. bottles of Sweetwater Spice Ancho Chipotle Brine Concentrate, a 10.8 oz. bottle of Cattleman's Grill Road House Seasoning, and 12 oz. of Kansas Wildflower Honey. Brine the turkey (ideally spatchcocked) in both bottles of concentrate plus 5 quarts of water for 1 hour per pound, then blend melted butter, the honey, and minced chipotles in adobo for an injection — inject half into the meat, season all over with Road House Seasoning, and save the other half to brush on as a glaze once the turkey's cooked.

Smoke at 325°F until the thickest part of the breast reaches at least 165°F, the USDA's minimum safe temperature for poultry, then glaze and rest before slicing.
