ATBBQ Savory Herb Turkey Kit

This kit builds its flavor around bright lemon and thyme rather than the classic apple-sage profile. A good pick if you want something a little different on the table this year without straying from traditional turkey.

You get two 16 oz. bottles of Sweetwater Spice Lemon Thyme Brine Concentrate and a 12 oz. container of Cattleman's Grill Ranchero Rub. Mix each bottle with 1 gallon of water and 1/2 cup kosher salt, submerge the turkey, and brine for 1 hour per pound. Pull the bird from the brine, tuck fresh thyme, rosemary, and sage under the skin and inside the cavity, then season everywhere with the Ranchero rub.

This flavor combination was built for Chef Tom's rotisserie method on a Kamado grill, but it works just as well on a standard smoker or in the oven — the citrus-forward brine and fresh herbs do the heavy lifting no matter how you cook it. Cook until the thighs hit 170°F and the breast reaches at least 165°F.
