ATBBQ Grilled Turkey Roulade Kit

This is a smaller-format turkey kit built for Chef Tom's Grilled Turkey Roulade a good option if you want real turkey flavor without cooking a whole bird, ideal for a smaller holiday table.

You get one 16 oz. bottle of Sweetwater Spice Classic Holiday Brine Concentrate and a 10.8 oz. bottle of Cattleman's Grill Trail Dust. The recipe itself butterflies a pair of bone-in turkey breasts, brines them for about an hour, then rolls them around a homemade herb-pistachio pesto and feta filling (pistachios, garlic, fresh sage, thyme, rosemary, lemon, olive oil, and feta — not included in this kit) before grilling until the internal temperature reaches 165°F, the USDA's minimum safe temperature for poultry, and finishing with a hot sear for color.

You'll also want your own container for brining and a food processor for the pesto — this kit provides the brine and seasoning, not the equipment or fresh pesto ingredients.
