Choosing the Right BBQr's Delight Pellet Flavor

The wood you burn affects the smoke flavor your food picks up, and some pairings work better than others. Hickory is the most versatile starting point — strong, classic BBQ smoke that works well with beef, pork, and chicken. Apple and cherry are milder and slightly sweet, better suited to poultry, pork, and fish where you want smoke presence without overpowering the protein. Pecan sits in the middle — more assertive than fruit woods but smoother than hickory, and an excellent choice for brisket and ribs. Mesquite burns hot and produces intense, earthy smoke — use it sparingly or reserve it for shorter, high-heat cooks. Jack Daniel's whiskey barrel oak brings a distinctive character from the charred barrel wood — a good choice when you want something different for beef or pork.
