Baked Jalapeño Poppers Recipe
16 oz. cream cheese
4 cups shredded parmesan cheese
2/3 cup fresh jalapeños (diced)
2 large eggs
4 cups panko bread crumbs
Mix all ingredients except panko in a large bowl. Form into small balls (mixture should yield 20 - 30 poppers) and roll in panko. Make sure each ball is coated evenly. Place the poppers onto a baking sheet or into a small foil pan.
Preheat your Yoder Smokers YS640 (or other grill) to 350°. Set your grill up in baking mode, or set it up for indirect heat. Bake the jalapeño poppers for 15 minutes or until golden brown.
