Amaretto Caramelized Peaches & Dates

Here is a summer peach dessert from Chef Tom. Amaretto and dates combine to add almond and caramel flavors. Serve with ice cream.
Amaretto Caramelized Peaches & Dates Recipe
- 4 peaches, halved, pitted
- 8 medjool dates, halved, pitted
- John Henry’s Sugar Maple Rub Seasoning
- 6 tbsp butter
- 1 cup sugar, divided
- 1 cup amaretto
- 1/4 cup mint leaves, chopped
- 4 scoops vanilla ice cream
Preheat your Yoder Smokers YS640 to 500°F. Place a Lodge Logic 12” cast iron skillet in the cooker. Toss the peaches and dates in John Henry’s Sugar Maple Rub Seasoning.
Melt the butter in the skillet, then sprinkle half the sugar around the pan. When sugar begins to melt, place the peaches and dates skin-side down and cook until the bottoms of the peaches begin to brown, about 5 minutes.
Carefully add the amaretto and the remaining sugar. Continue cooking and caramelizing for about one more minute.
Turn the peaches over to brown the flesh sides, about one minute. Remove fruits from the skillet and garnish with mint leaves. Serve with vanilla ice cream.
