Bourbon Peach Cobbler

This cobbler is a great way to warm a fall evening with the last of those summer fruits hanging around the grocery store!
Recipe: Bourbon Peach Cobbler
Yield: 8-10
Ingredients
Filling:
- 6 large peaches, sliced
- 1 C blueberries
- 1/2 C bourbon
- 1/4 C sugar
- 2 T cornstarch
- 2 t cinnamon
- 1/2 t vanilla extract
- juice of half a small lemon
Topping:
- 1 C flour
- 1/2 C rolled oats
- 1/2 C sugar
- 1/2 t salt
- 3/4 C unsalted butter, small cubes
- 2 T heavy cream
Instructions
Preheat your Yoder Smokers YS640 to 400ºF. Combine the filling ingredients in a bowl and toss to distribute evenly. Set aside.
Make the topping: In a large bowl, mix topping ingredients until all ingredients are incorporated. Dump filling into a Lodge Logic 12” Cast Iron Skillet. Crumble the topping over the filling.
Bake until topping is golden brown and filling is thick and bubbling, about 1 hour. Serve warm with vanilla yogurt or ice cream.
