This is an easy to make version of a classic Thai recipe. Save time and marinade up to 24 hours ahead of grilling.
Thai Chicken Skewers with Spicy Peanut Sauce Recipe
Ingredients
- 2 lb white chicken meat
- 1 (16 fl oz) bottle Smoke on Wheels Pork Marinade
- 1 (13.5 oz) can coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tsp cayenne
- Kim’s Gourmet Spicy Peanut Sauce
Instructions
Slice the chicken into 1” wide strips. Combine the Smoke on Wheels Pork Marinade, coconut milk, red curry paste, fish sauce and cayenne in a bowl. Whisk to combine. Place the chicken and marinade in a zip top bag and marinate for one hour.
Preheat your Yoder Smokers YS640 450ºF. Remove the chicken from the marinade. Place the chicken on skewers. Grill on both sides until the internal temperature reaches 160ºF. Check the internal temperature using an instant read thermometer, like the Maverick PT 100.
Slide chicken off of skewers. Serve over rice with a drizzle of Kim’s Gourmet Spicy Peanut Sauce.
