This is an easy-to-make version of a classic Thai recipe. Save time and marinade up to 24 hours ahead of grilling.
Thai Chicken Skewers with Spicy Peanut Sauce Recipe
Ingredients
- 2 lb white chicken meat
- 1 (16 fl oz) bottle Smoke on Wheels Pork Marinade
- 1 (13.5 oz) can coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tsp cayenne
- Kim’s Gourmet Spicy Peanut Sauce
Instructions
Slice the chicken into 1” wide strips. Combine the Smoke on Wheels Pork Marinade, coconut milk, red curry paste, fish sauce and cayenne in a bowl. Whisk to combine. Place the chicken and marinade in a zip top bag and marinate for one hour.
Preheat your Yoder Smokers YS640 450°F. Remove the chicken from the marinade. Place the chicken on skewers. Grill on both sides until the internal temperature reaches 160°F. Check the internal temperature using an instant read thermometer, like the Maverick PT-75.
Slide chicken off of skewers. Serve over rice with a drizzle of Kim’s Gourmet Spicy Peanut Sauce.
